Morellino di Scansano "MAGO DI O3" DOCG MANTELLASSI
The Fattoria Mantellassi has produced the first Morellino di Scansano without added sulphites with Purovino technology. Purovino replaces the use of sulfur dioxide (a wine preservative that has various contraindications) with ozone which, due to an hyperoxygenation process, blocks the oxidation of the wine, thus guaranteeing excellent conservation of the organoleptic properties. Purovino is a scientific-technological method aimed at the production of wines without added sulphites, with particular attention to environmental sustainability and healthiness of the final product. The grapes of "Mago di 03" are treated by saturating the atmosphere of the storage chamber with Ozone for one night. The grapes thus sterilized are processed through equipment which is in turn treated with the same gas. The must thus obtained does not need to be protected with sulfur dioxide, nor will there be any need to add sulphites to the wine. The grape variety used for its vinification is 100% pure Sangiovese. The origin is the classic one of Magliano in Toscana. For the vinification the traditional red method is applied in stainless steel tanks. Maturation and refinement take place in stainless steel tanks and a few months in the bottle.
Morellino di Scansano Mago di O3 DOCG’s features
An intense ruby red colour. The perfume on the nose expresses beautiful aromas of red fruit and violets embellished with spicy notes. The taste on the palate is fresh, characterized by well balanced, soft and persistent tannins, and by a great overall harmony. Excellent drink.
