Franciacorta Extra Brut "E.B.B" DOCG MOSNEL
A prestigious Franciacorta Mosnel. Vinification involves the use of 100% pure Chardonnay grapes only. The origin of the vines falls within the company areas and the grapes all have optimal exposure to the East-South/East. Harvest takes place in the traditional way and deposited in small crates between the second and fourth week of August. The vinification requires only the “Mosto Fiore” (the first fraction of the juice) which is the one that will be destined for Franciacorta "E.B.B.". The primary fermentation took place in small oak barrels (225 liters), which housed the wine for five months, until the spring following the harvest. The assembly and bottling with "tirage syrup" precede the stacking for refermentation in the bottle. Maturation and refinement require that the stacked bottles remain at least 36 months in the rooms of our cellars before "remuage". Subsequently opened and dosed "Extra Brut" they receive the mushroom cap and the wire cage. Finally, at least six months of further refinement are required before this Franciacorta is placed on the market.
Franciacorta Extra Brut “E.B.B.” DOCG Mosnel’s features
A bright gold colour with a fine perlage. The scent is expressed with lemon blossom and verbena, and the theme of the bright fruit, with notes of mandarin, ginger and crunchy green apple. Nuances of menthol, pepper and salt. Taste of citrus bergamot with a clear flavour supported by the Extra Brut dosage, which enhances the delicate and aristocratic style of this Franciacorta.
