This Apulian red wine from Paololeo Winery is made from 100% Primitivo grapes grown in the rural area of Manduria and Sava, near Taranto. Primitivo is a native grape variety whose grapes boast a remarkable predisposition for early ripening. The grapes are harvested manually in the early hours of the morning and then destemmed; fermentation then begins in temperature-controlled steel tanks for about ten days, followed by ageing in barriques for 3 months and 6 months in steel tanks.
Characteristics of this Apulian wine
It has a ruby red colour with garnet reflections. The bouquet evokes black berries, liquorice and coffee. On the palate, it is enveloping with velvety tannins.
