This rosé wine from the Paololeo winery in Puglia is made from Malvasia Nera grapes grown in the ancient Salento countryside near Brindisi and Lecce. The grapes are harvested in the early hours of the morning, when it is coolest. After harvesting, the grapes are cooled to 0°C in a soft press for about 4 hours in contact with the skins in order to extract their characteristic colour. The fermented must ferments for about ten days in steel tanks. The final stage of ageing requires the wine to be left in steel tanks for a period of 3 months.
Characteristics of this Apulian wine
It has a cherry pink colour with very bright reflections. The bouquet is reminiscent of red fruits and Mediterranean scrub. On the palate, it is fresh with a pleasant, particularly fruity persistence.
Recommended pairings with this rosé wine
Excellent with fried fish, sushi and sashimi, and white meat dishes. Serve at a temperature of 10-12°C.
