This Salice Salentino from the Paololeo winery in Puglia is made from a blend of Negroamaro and other native grape varieties from the provinces of Brindisi and Lecce. The grapes are harvested in the early hours of the morning to ensure that the cooler temperatures preserve their integrity and freshness. This is followed by destemming and fermentation. The final stage of ageing takes place in steel for 18 months.
Characteristics of this Apulian wine
It has a ruby red colour with garnet reflections and an aromatic bouquet of red fruits: cherries, plums and black cherries. On the palate, it is slightly spicy with a persistent finish reminiscent of black cherry notes.

Try it with well-structured dishes based on red meat, mushrooms and fine cheeses. Serve at a temperature of 18°C in a large glass.
