This Fiore di Vigna red wine from the Paololeo winery in Puglia is part of a line dedicated to distinguished grapes, native vines capable of producing great wines thanks to skilful vinification and ageing in oak. This wine is made from 100% Primitivo grapes from the area between the provinces of Brindisi and Lecce: once harvested manually during the grape harvest, the grapes are left to dry for 3 weeks, during which time they are exposed to gentle ventilation, thus enriching their aromatic and structural components. This is followed by fermentation in steel at a controlled temperature for 8-10 days and maceration on the skins. The final stage of ageing requires 12 months in American oak barriques, followed by a further 6 months in the bottle.
Characteristics of this Apulian wine
It has a very intense garnet red colour and a pleasantly spicy bouquet, reminiscent of black berries. The tannins are velvety, the palate is well balanced, with a long finish and excellent persistence.
Recommended pairings with this red wine
Excellent with first courses based on particularly elaborate sauces, meat dishes and game. Serve at a temperature of 17-18°C.
