This red wine from the Apulian Due Palme Winery comes from pure Primitivo grapes grown on calcareous clay loam soils rich in iron and minerals. The harvest takes place between the end of August and the beginning of September: the bunches are harvested with a slight overripening and then fermentation takes place for about 10 days at a controlled temperature. The final refinement process instead takes place in French and American oak barriques and finally in the bottle.
Characteristics of this wine from Puglia
It has a very intense ruby red color. The olfactory profile is a riot of red fruit, spices and balsamic notes. On the palate it is fresh and savory with a delicate tannic texture. Persistence is very long.
Recommended pairings with this Salento red wine
Try it with first courses based on meat, cured meats and mature cheeses. Serve at a temperature of 18-20°C.
