Calaluna from the Paololeo Winery in Puglia is a white wine made exclusively from Fiano grapes: one of the most prestigious grape varieties in southern Italy, with a fresh character and fruity aromas. The grapes are harvested at night to avoid the high summer temperatures of Salento, but also to preserve the freshness and integrity of the berries. Once pressed, the skins are cold macerated for 6-8 hours, a fundamental process for aromatic extraction. After soft pressing, the must is statically clarified and fermented for about 10 days, then aged in steel for about 3 months on fine lees.
Characteristics of this Salento wine
It has a straw yellow colour with greenish reflections; very intense citrus and tropical fruit aromas, while on the palate it is fresh and well-balanced, with a long finish.
Recommended pairings with this Salento white wine
Try it with white meat or fish dishes, but also soft cheeses and vegetable dishes. Serve at a temperature of 8-10°C.
