This red wine from the Paololeo winery in Puglia is made from 100% Primitivo grapes and is part of the Varietali line: a line specifically dedicated to single grape varieties in their purest form. Primitivo grapes are particularly notable for their tendency to ripen early. Grapes from vineyards in the area between Sava and Manduria, near Taranto, are used to produce this Apulian wine. Once harvested manually towards the end of August, the grapes are destemmed and fermented in steel tanks at a temperature of 22-24°C for about ten days. The wine is then aged in steel tanks for 5 months.
Characteristics of this Apulian wine
It has a ruby red colour with violet reflections and is striking for its fruity aromas of cherry, blackberry and raspberry. On the palate, it is enveloping, with a very delicate tannic texture.
Recommended pairings with this red wine
Perfect with typical Apulian dishes; try it with meatballs in sauce or meat-based dishes. Serve at a temperature of 17-18°C.
