This Salento rosé wine from Paololeo Winery is made from 100% Negroamaro grapes grown in the Salento countryside between Brindisi and Lecce. The grapes are harvested in the early hours of the morning at the beginning of September. They are then destemmed, crushed and cooled before being transferred to steel tanks where they macerate for about 6 hours. After clarification of the must, fermentation takes place at a low temperature. The final stage of ageing takes place in steel tanks for 6 months.
Characteristics of this Salento wine
It has a very characteristic cherry pink colour with bright reflections. Aromas of red fruits and Mediterranean herbs prevail on the nose. The taste is fresh and elegant, with a crisp and fruity finish.

Try it with light appetisers, fish dishes or white meats. Serve at a temperature of 6-8°C.
