This rosé wine from Sardinia comes from the use of Bovale with local white grapes. The Nina from the Su'entu winery originates from northwest-facing vineyards on sandy loam soils, at an altitude of 130 m above sea level. The harvest takes place in the last ten days of August and at night, in order to preserve the grapes from the high daytime temperatures. White winemaking takes place with a total absence of maceration: only the flowering must is used and cleaned in steel tanks by static cold decanting, for 48/72 hours. Subsequently, alcoholic fermentation is triggered at 13°C and finally maturation for 4 months in steel in contact with the fine lees, constantly suspended by batonnage.
