From the vinification of young 100% pure Cortese grapes from the Gavi area of Piedmont, in the heart of the Controlled and Guaranteed Designation of Origin. Harvest by hand, vinification takes place with soft pressing. Refinement requires the grapes to ferment in stainless steel tanks for three months and then be bottled.
