This wine represented the hospitality and the friendship offered to the tourists that passes in this region. Barbi farm has always shared this philosophy and still today, they try to preserve the tradition of this wine, even if the yearly production is considerably low. It is a blend composed by 55% Trebbiano, 35% Malvasia and 15% Sangiovese. For the production of Vinsanto, BarbI plans the harvest in the middle of September. Then, the grapes are dried on traditional lattices till the first days of January, when they reach a high content of sugar and the dispersion of water. When the grapes are ready, they are submitted to soft-pressing and the concentrate must is introduced in “caratelli” (small oak barrels max 1-2 hl) with the “mother” (concentrated must of the previous wines). These traditional containers have always been used for the production of Vinsanto because they reproduce the perfect location for the bio-chemical transformation that the must has to face during the long period of rest. After that, the must is separated from the “mother” and introduced in smaller “Caratelli” (max 0,65 hl). This article is then bottled and sold one year later.
Features of this Vinsanto
The organoleptic aspect shows an amber yellow colour. The perfume is delicious, full of rich aromas, with hints of raisins, candied fruits and nut, joined to a delicate fragrance that recalls chestnut honey. Its taste is harmonious, smooth and the balance between the alcoholic sweetness and a great freshness is wonderful. The final is pleasant and long-lasting

Perfect with “cantucci” (typical sweet pastries made with almonds). Ideal also with savoury, aged cheeses, cold cuts, and liver paté.
