Bollé is a sparkling wine from the Pratello winery produced in the Lake Garda area, in the Lugana DOC area, and is made from Turbiana grapes. It is a small sparkling wine that interprets the territory in a fresh and immediate way, with a productive approach that combines the tradition of the ancestral method with modern autoclave winemaking techniques, creating a fragrant and highly drinkable wine. Bollé production begins with the manual harvesting of Turbiana grapes, followed by soft pressing of the whole grapes to maximize the aromatic delicacy of the must. After cold static decantation overnight at about 8 °C, the wort is sent for autoclave fermentation, which lasts about 16 days and allows the natural development of bubbles through the Charmat method. The wine is then bottled and left to refine in the bottle for approximately 3–4 months, a period that allows for the best integration of the perlage and the completion of the flavor balance.

It has a bright straw yellow colour with greenish reflections and a fine, persistent perlage. The bouquet is intense and immediate, with notes of apple, pear, apricot and hints of rose and exotic fruit that define its aromatic profile. The balance between fruity component and freshness makes it harmonious and particularly pleasant to drink, with a clean and consistent finish.

It pairs perfectly with light dishes such as fish appetizers, sea fry, vegetables and summer salads, but also with delicate first courses such as herb risottos or light pastas. The ideal service temperature is between 8 and 10 °C.
