The Rosé Brut Bio Ancestral Method Sparkling Wine from the Pratello winery is born on the moraine hills of Lake Garda, in a context characterized by skeletal-rich glacial soils and a microclimate mitigated by the presence of the lake. The grapes, grown organically, come mainly from native Valtènesi grape varieties, with a prevalence of Groppello, often accompanied by complementary varieties that contribute to the wine's balance. Harvesting is manual and early to preserve freshness and acidity. Winemaking follows the ancestral method: after soft pressing, the must begins fermentation in the vat and is bottled before its conclusion, without filtration or disgorgement. Foam is then naturally added in the bottle, thanks to the residual sugars and indigenous yeasts, without the addition of liqueur de tirage. The result is a live wine, authentic and closely linked to the territory.
Characteristics of this Pratello sparkling wine
In the calyx it has a pale pink color, sometimes veiled due to the presence of suspended yeasts, a typical characteristic of the ancestral method. Perlage is fine but delicate, less persistent than classical methods but extremely natural. On the nose it expresses a fragrant and rustic-elegant profile, with notes of small red fruits such as strawberry and raspberry, accompanied by floral notes and light shades of bread crust due to fermentation in the bottle. On the palate it is fresh, lively and smooth, with a marked acidity and a pleasant flavour that increase its drinkability.

It is a versatile sparkling wine, ideal as an aperitif but also in combination with cured meats, peasant dishes, fried foods, pizza and informal preparations. It also lends itself well to tasty fish dishes thanks to its freshness and savoury component. The recommended service temperature is between 8 and 10°C.
