Valpolicella Classico Superiore DOC DOMINI VENETI
This elegant blend by Domini Veneti is composed by 60% Corvina, 15% Corvinone, 15% Rondinella and 10% other grapes. The vineyards are located in the traditional area of Valpolicella, between 150 and 450 meters above the sea level. The harvest is planned in September and October and it is managed manually. The wine making considers the elimination of stalks and the soft pressing. The fermentation temperature is set on 25-28°C and the maceration that lasts 10 days. The aging is managed in steel tanks. Malolactic fermentation and natural stabilization.
Features of the wine
Ruby red colour enriched by intense and persistent perfumes that recall cherry, plum, flowers like violet and black pepper. Its taste is fresh, fruity, with a good balance between structure and body. Good acidity and great tannins.
Recommended food pairings
This wine is perfect with the traditional dishes of Verona. It is excellent with cold cuts. It has to be served at 16°C in a wide wine glass. 13,5% Vol.
