ACINORE' was born from the use of vineyards raised "in saplings" and with an average age of 50 years. The grapes used to produce this red wine from the Giustini Winery are obviously Primitivo di Manduria in purity and come from the vineyards of San Giorgio Ionico, Taranto. Once harvested during the early September harvest, the grapes are destemmed and pressed. This is followed by a 15-day maceration followed by alcoholic fermentation at a temperature of 24-26°C. The final aging phase takes place in French oak barriques for 6 months.
Characteristics of this Salento wine
It has an impenetrable deep ruby red color. The olfactory notes recall plum, jam, vanilla, and cocoa. On the palate it is full and with a long and persistent finish.
