Pinot Grigio Sot Lis Rivis DOC originates from Pinot Grigio vineyards located in the locality of Sot Lis Rivis. The harvest is deliberately delayed as much as possible to take advantage of a characteristic of grapes, which once ripe tend to lose water, thus concentrating the aromatic and sugary substances. In the cellar, winemaking takes place in white, with soft pressing of the whole grapes and fermentation at a controlled temperature around 19 °C with selected yeasts. The aging process takes place in non-new oak barrels for about a year, a choice that gives the wine greater structure and aromatic complexity without covering its varietal identity, while malolactic fermentation is not carried out.
Characteristics of this Friulian wine
It is a Pinot Grigio with an opulent and unconventional approach, characterised by a good structure and a rich taste supported by moderate acidity. The alcohol content is high but well integrated, contributing to a soft feeling that harmonizes with the intense fruit. On the nose, unusual citrus notes emerge for the type, which are also consistently found on the palate, giving the wine an original and complex profile, far from the idea of a simple Pinot Grigio.

This wine lends itself to numerous gastronomic combinations, but finds its ideal expression with fish-based preparations, particularly raw tuna and swordfish, as well as bluefish dishes. It also pairs well with dishes characterized by citrus marinades, thanks to its aromatic component and the structure that allows it to support intense flavors. Serve at a temperature of 10-12°C.
