The wine is made from Sauvignon grapes grown in vineyards located at the foot of the Cormons hills, in deep, silty soils capable of retaining moisture. After harvesting, the grapes are subjected to a short cold maceration, followed by soft pressing and fermentation at a controlled temperature around 19 °C with selected yeasts. The wine then matures for about a year in large-capacity oak barrels, remaining on the fine lees, and is bottled in the autumn following the harvest, thus completing a process that prioritizes structure and balance.
Characteristics of this Friulian wine
It presents itself as a full, soft and balanced wine, capable of supporting good acidity and an important alcohol content without losing harmony. On the nose it expresses the typical characteristics of Sauvignon with notes of ripe yellow fruit, citrus fruits –especially grapefruit– and shades of aromatic herbs. On the palate it is intense and aromatic, with a consistent correspondence between aromas and taste, a good freshness and a well-defined structure that leads to a persistent and elegant finish.
Recommended pairings with this white wine from Ronco del Gelso
It pairs very effectively with fish-based dishes, especially roasts and white fish preparations, but also with shellfish and seafood. It works very well with dishes that use aromatic herbs such as thyme and rosemary, as well as with white meats and fresh cheeses, thanks to its structure and aromatic component that supports quite intense flavors. Serve at a temperature of 10-12°C.
