Refined and elegant Salentino red wine from Negroamaro grapes from the Mediterranea winery. This red wine is the maximum expression of the Salento territory, it reflects the traditions and local habits and is the symbol of excellent food and wine of the territory. The production is also made with Negroamaro grapes 100% and the vineyards are cultivated within the company on soils of karst calcareous urine and are particularly rich in iron and aluminum sesquioxides. The yield of the vineyards is 120 quintals per hectare of vineyard land. For the vinification of this exceptional red wine from Salento, soft crushing and the consequent maceration of the crushed grapes for a maximum of 20 days is foreseen. Later, after draining and pressing, only the flower must is fermented with the aid of selected yeasts and kept inside thermo tanks conditioned at a maximum temperature of 23 ° C. Then at the end of fermentation the wine is decanted into barrels of barriques and then in the bottle for further aging where it remains for at least 6 months.
Characteristics of this Apulian red wine
From the organoleptic point of view, the Negroamaro wine from Salento Emozione returns characteristics of winemaking excellence. The color is intense and deep red, very subtle ruby reflections not very evident. The aroma is broad of hazelnut, red undergrowth fruit, typical of the varietal, and nuances of plum. The taste is soft, velvety and full with a robust and round body of exceptional structure.

The red wine Emozione Negroamaro IGT is particularly suitable for combinations with dishes of great character and structure. Roast meats with herb sauces, seasoned and spicy cheeses, medium-aged and long-seasoned pecorino and particularly tasty fish soups combined with structured fillings.
