From the Montemarzino and Montegioco vineyards, facing southwest and southeast at approximately 350 m above sea level comes this white wine from Piedmont , with its extraordinary structure and incredible longevity. Its production uses pure Timorasso grapes: an ancient native Piedmontese white grape variety that is particularly resistant to weather events and characterised by inconsistent production. The grapes harvested during the harvest are destemmed and subjected to soft pressing; this is followed by alcoholic fermentation in steel at a controlled temperature. The wine then rests on its own lees for 7 months, then is filtered and bottled where it ages further for another 4 months.
Characteristics of this Piedmont wine
It has a bright straw yellow color and citrusy but also floral olfactory notes, with hints of chamomile and hydrocarbon. On the palate it is full, enveloping, with a pleasantly fruity aftertaste and a long, mineral and fresh finish.
Recommended pairings with this wine from La Spinetta
Try it with seafood dishes like seafood salads, steamed appetizers, fried foods, and grilled meats. It's also excellent with white meats. Serve at a temperature of 10-12°C.
