Mamete Prevostini produce this fabulous Rosso della Valtellina Grumello DOCG with 100% Nebbiolo. The vineyards are located in the area Valtellina Superiore Grumello, around the village of Montagna. The harvest starts after the first decade of October. During the winemaking, only the best grapes are selected for the pressing, that means that the ruined fruits or those hit by the mould are immediately rejected. After the elimination of stalks, the pressed grapes are poured into steel containers where the alcoholic fermentation starts. 11 days maceration on skins at 25°C, followed by malolactic fermentation in oak barrels and 12 months aging. The maturation continues in the bottle for 8 months.

The organoleptic analysis shows a clear ruby red colour. Its persistent scent recalls hazelnuts, blackberry and currant. The taste is smooth, harmonious and fresh, with definite tannins that contribute to its pleasant structure.

It is perfect with meat and medum aged cheese. It has to be served at 17°C in a wide wine glass that helps the oxygenation.
