Descrizione vino

The vinification of 100% Cabernet Sauvignon grapes. The origin for the "Pareto" is linked to the grapes from the homonymous vineyard located in our historic Nozzole Estate in the municipality of Greve in Chianti. The vinification involves maceration with délestage and pumping over in stainless steel tanks at a controlled temperature of 28ºC. Duration: about 22 days. The aging in steel the first 2 months, then toasted barrels of French Oak 225 liters with turnover (30% new, 40% one year, 30% two years) for 18 months. The aging is developed for a minimum of 6 months in bottle.

The wine has a deep ruby red color. The nose is extremely intense with descriptions of red fruits, pomegranate, tobacco, balsamic wax, vanilla, etc. The taste in the mouth dry, with great sensory power, rich in vinous aromas, with great sweet-bitter balance, perfect harmony, very dilavante, descriptors of cocoa, coffee, pepper and red fruit salad. A wine of great sensorial fullness in which the relative youth does not detract from the sensorial greatness. A complete, exciting and rare wine. In sure evolution terziaria in the next 30 years.
