Wine description
The use of pure Susumaniello grapes gives rise to this red wine from the Apulian Varvaglione winery. Following the harvest, the grapes are briefly macerated at a temperature of 12-14 C°, followed by fermentation for 15-20 days at a controlled temperature of 24-26 C°. Once the malolactic fermentation has taken place, the final stage of ageing takes place in large casks for 6 months.
Characteristics of this Apulian wine
It has an intense red colour. The olfactory bouquet recalls ripe red fruit, spices and balsamic notes. The palate is striking for its dense tannic texture and great intensity as well as persistence.
Recommended pairings with this Apulian red wine
Excellent with traditional Apulian dishes and more generally with all meat dishes. Serve at a temperature of 17-18 C°.
