Ribolla is a native Friulian grape variety known since the 14th century. It owes its name to the high malic acid content that once caused the wine to "ribollire" in the demijohn. For this wine from Cantina Monviert, pure Ribolla Gialla grapes are used, harvested manually during the harvest. The bunches are destemmed and pressed: a must is obtained that clarifies the process of decanting. We proceed with alcoholic fermentation at a controlled temperature of 18-20°C in steel. Once fermentation is completed, the wine ages in steel for 3-4 months, with frequent movements.

It has a delicate straw yellow color. The olfactory profile is floral and resembles banked flowers and orange blossoms. On the palate it is dry, fresh and with good acidity.
