Negroamaro and Syrah cleverly combines themselves in order to give birth to the estate's flagship wine. The grapes selection takes meticulously place in the Maìme estate in San Pietro Vernotico in the province of Brindisi. The vinification first provides that the cold prefermentative maceration last 5 days at a temperature of 5°C. This passage allows a correct extraction of the varietal aromas, the color and the softer polyphenolic components. Racking and skinless fermentation at a temperature of 18°C follow.
