Malvasia Dolce DOC GIORGI
Giorgi produces a traditional wine that can be defined classy and fantastic: we are talking about the sparkling “Malvasia dell’ Oltrepò Pavese”. 100% Malvasia grapes, whose vineyards produce 85 quintals per hectare. After the harvest, planned at the beginning of September, the wine making starts with a soft pressing that extracts only the free-run must. The fermentation is managed in steel at a controlled temperature of 16°C. Once reached the alcoholic strength of 6% Vol the wine is filtered and cooled. The foam formation process is managed in autoclave.
Features of this sweet “Malvasia”
The organoleptic analysis reveals a straw yellow colour with gold reflections. Its scent is wide and recalls an intense, aromatic bouquet. The taste is sweet, harmonious and smooth.
Recommended food pairings while tasting this sweet “Malvasia”
Excellent with every type of sweet, with dried fruits or with aged cheese. It has to be served at 10°C in a small wine glass that helps the concentration of the perfumes. The alcoholic strength reaches 7% Vol.
