Part of the wine is put in wooden barrels for 5 months while the other part is put in stainless steel tanks where it occurs the alcoholic fermentation in contact with the lees. Suggested pairings with this Castello della Sala Antinori
The Bramìto del Cervo di Castello della Sala is a meal wine but it is perfect with structured sea meal. The fish soups or the sea grilled food and other Mediterranean sea cooking are very good matches too. It has to be served at 14°C in high and tapered wine glasses to help the oxygenation and to allow the smelly fragrances to delight the taster.
