The Conte della Vipera is a particular refined wine. It born from an accurate selection of Sauvignon Blanc grapes to which is added a little quantity of Sémillon fermented in wood. The blend is lately aged in bottle for few months. The Conte della Vipera wine of the Antinori marquises takes its name from the "Della Sala" castle owners: the Monaldeschi della Vipera family. The blend is composed by 80% of Sauvignon Blanc grapes and 20% of Sèmillon grapes all manually picked. It is honored by the Umbria IGT certification. The vineyards used for the production of the Conte della Vipera are located at 250-350 meters above the sea level on sediments of sea fossils with some clay which give a mineral taste to the sapid grapes. The manually picked bunches are immediately cooled before being pressed not to change the characteristics of the grapes. After a soft pressing the must is kept at 10°C for some hours. It is put in stainless steel tanks for the alcoholic fermentation at 16°C. After this operation the wine is kept at 10°C for the malolactic fermentation. The Sauvignon Blanc is lately blended with the Semillon to exalt the sapid taste and to bring roundness and complexity.
Characteristics of this great white wine
The straw yellow color with green reflections is symptom of freshness and youth. It has a fruity and citron smell together with white peaches fragrances. The palate has character and structure but it is also persistent and harmonic. It has also a remarkable acidity that allow to achieve the right degree of freshness.

The Conte della Vipera is perfect with fish. It has to be served fresh at 10°-12°C in a high and tapered wine glass.
