Brut Miabi Pinot Noir Sparkling Wine is made from Pinot Noir grapes grown in Lombardy, in an area characterized by a temperate climate, good temperature variations, and marly soils rich in limestone and clay, ideal conditions for balanced grape ripening. Winemaking takes place in white, with soft pressing and immediate separation of the skins, followed by an initial fermentation at controlled temperature. The frothing process is carried out using the Martinotti long method in an autoclave, remaining on the lees for a few months and frequently stirring, a practice that enriches the wine in structure and aromatic complexity, before stabilization and bottling.
Features of this Bottega Winery Sparkling Wine
From an organoleptic point of view it has a bright straw yellow colour and a fine, persistent perlage. On the nose it expresses a complex and elegant bouquet, with notes of bread crust and yeast accompanied by delicate floral nuances. On the palate, it's full, rounded, and soft, with good structure and a pleasant flavor supported by balanced acidity. Yellow fruit aromas emerge, evolving towards sweet almond sensations on the finish, with a long, harmonious persistence.
Recommended pairings with this Miabi Brut Sparkling Wine
As for pairings, it is a very versatile sparkling wine that lends itself both as an aperitif and as a full meal. It pairs well with appetizers, risottos, and seafood dishes, especially shellfish, but also successfully accompanies vegetable preparations, sushi, flavorful white meats, and cheeses, culminating in desserts that aren't overly sweet thanks to its balance of freshness and softness. Serve at a temperature of 4-5°C.
