Vino dei Poeti Conegliano Valdobbiadene Prosecco Superiore DOCG Rive di Col San Martino della Cantina Bottega. is obtained mainly from Glera grapes grown in the steep hills of the “Rive”, particularly suitable areas where all operations are carried out manually to ensure the highest quality. Harvesting is done by hand with selection of the best bunches, followed by soft pressing to preserve the most noble components of the must. After clarification and the first fermentation in steel at controlled temperature, the wine is subjected to froth setting using the Martinotti Method in an autoclave at approximately 14-15 °C. This is followed by a period of aging on the yeasts, which enriches the structure and aromatic complexity, before stabilization, filtration and bottling.
Characteristics of this Prosecco from Cantina Bottega
From an organoleptic point of view it has a bright straw yellow colour, accompanied by a fine and persistent perlage. On the nose it is elegant and refined, with a predominantly fruity bouquet in which apple, pear, banana and peach emerge, followed by delicate floral notes of wisteria and jasmine. On the palate, it is round and creamy, with a good structure and a characteristic savory vein that provides balance; the finish is pleasantly fruity and harmonious, with a soft sensation typical of the Dry type.
Recommended pairings with this wine from Veneto
It lends itself very well as an aperitif, but elegantly accompanies appetizers and first courses based on fish, shellfish and vegetables, such as asparagus risotto. It is also suitable for delicate poultry and fish main courses, and thanks to its softness it also pairs well with fresh fruit and dry pastries. Serve at a temperature of 4-5°C.
