Bibi Graetz's Casamatta Rosso IGT Toscana was born with the idea of expressing a young Sangiovese, direct and deeply connected to the Tuscan territory, highlighting above all freshness and drinkability. The grapes come from different areas of the region, many of which are characterized by old vineyards, which contribute to greater complexity while maintaining an accessible style. The production follows a careful but not very interventionist approach, aimed at preserving the varietal character of the Sangiovese. After manual harvesting, the grapes are selected and sent for temperature-controlled steel fermentation. This phase is managed to extract color and aromas in a delicate manner, avoiding tannic excesses and maintaining the fragrant profile of the wine. At the end of the alcoholic fermentation, the wine continues its aging exclusively in steel tanks: a blend is made between the different vineyards that will age for 6 months in steel tanks.
Characteristics of this Tuscan wine
It appears to be a bright ruby red color, not too concentrated, with purple reflections that underline its youth. The clarity is good and the consistency is medium, in line with a wine that is more about finesse than structure. On the nose it opens with frank and lively scents, dominated by notes of fresh red fruit such as cherry and raspberry, accompanied by light floral nuances, especially purple. Delicate hints of aromatic herbs also emerge and a slight spicy note, always very subtle, which enriches the bouquet without weighing it down. The intensity is medium but well defined, with a pleasant expressive immediacy. On the palate, the wine is smooth and harmonious, characterized by a good freshness that supports the drink. The tannins are soft and not very aggressive, well integrated into the structure, while the body remains slender and agile. The fruity component returns consistently, accompanied by a slight savouriness that gives balance. The finish is clean, of medium persistence, with a fresh and fruity aftertaste that invites a new sip.
Recommended pairings with this Bibi Graetz red wine
It is a wine that accompanies daily cooking well, especially traditional Italian dishes that are not too structured. It pairs easily with first courses such as tomato pastas, light ragùs, or vegetable preparations, but also with simple main courses such as grilled or pan-fried red and white meats. It strikes a great balance with medium-aged cured meats and cheeses, where its acidity helps cleanse the palate without overpowering the flavors. It is also interesting with rustic dishes such as savory pies or legumes, thanks to its versatility and immediacy. Serve at a temperature of 16–18 °C.
