This Valdobbiadene Superiore DOCG Cartizze Vino dei Poeti from Bottega represents one of the most prized expressions of the Valdobbiadene area, obtained mainly from Glera grapes grown in the narrow hilly area of Cartizze. Harvesting is done exclusively by hand, selecting the best bunches and quickly taking them to the cellar to preserve their integrity. After soft pressing, the must is clarified and fermented at controlled temperature in steel. Foam is obtained using the Martinotti Method in an autoclave, followed by a period of aging on the yeasts which contributes to enriching the structure and aromatic complexity. Finally the wine is cold stabilized, filtered and bottled.
Features of this Prosecco di Bottega
From an organoleptic point of view it has a pale and bright straw yellow colour, characterised by a fine and persistent perlage and a creamy foam. On the nose it expresses an intense and refined bouquet, with notes of white fruit such as golden apple, peach and apricot, accompanied by elegant floral notes of zagara and peach blossom. In the mouth it is fruity, lovable and fresh, with a good aromatic persistence that makes it balanced and pleasantly enveloping.

It lends itself very well as an aperitif, but finds particularly successful combinations with soft and creamy cheeses, delicate risottos such as asparagus, and even desserts made with dry pastries or vanilla creams, thanks to its slightly sweet component that harmonizes with sweet preparations.
