The Extra Dry Sparkling Wine from Cantina Bottega is made from a cuvée of Pinot Noir, Chardonnay and Glera grapes from Lombardy and Veneto. After harvesting, the grapes are quickly taken to the cellar to preserve their integrity, then subjected to soft pressing and white vinification. The foaming takes place in an autoclave according to the Charmat (or Martinotti) method, with fermentation at a controlled temperature around 14-15 °C and subsequent aging on the yeasts, especially for the Pinot Noir component, which contributes to giving greater complexity and aromatic fineness.
Features of this Bottega Sparkling Wine
From an organoleptic point of view it has a bright straw yellow colour and a fine, persistent perlage. The olfactory profile is elegant and complex, with fruity and floral notes accompanied by light shades of yeast and bread crust. On the palate it is full, fresh and lively, with a good flavour and a balance between acidity and sugary residue typical of the Extra Dry type, which makes it soft but at the same time dynamic.

It lends itself very well as an elegant aperitif, but also accompanies fish appetizers, especially raw ones like oysters and shellfish, as well as fish dishes and white meats with vegetable side dishes. Its versatility also makes it suitable for convivial and informal contexts, while still maintaining a distinctive image thanks to the scenographic bottle. Serve at a temperature of 4-5°C.
