This Friulian white wine is a product that boasts a certain prestige thanks to the particular procedure that is carried out for its creation: the grapes used are 100% Ribolla Gialla and come from the company vineyards, in which precautions are scrupulously adopted to safeguard nature and animals. The bunches collected during the harvest are perfectly ripe and intact: the secret of this prestigious wine lies in the fact that the fermentation takes place in underground Caucasian amphorae for a period of 7 months, without the aid of selected yeasts and without maintaining the temperature at a particular level. This is followed by the racking phase and then another stop in the amphora for 5 months in order to then face the refinement in oak barrels for 6 years.
Characteristics of this Friulian wine
This wine falls into the category of Orange wines, born from white grapes but vinified like red wines: this means that takes place maceration, that is the contact of the must with the pomace. For this reason even the color of this type of wine is very particular, precisely orange. This Friulian wine has a very bright amber color and an olfactory profile that includes yellow pulp fruit, aromatic herbs, flowers and bees wax. On the palate there is a tannic texture given by the long maceration phase on the skins: the sip is full, with balsamic nuances and with a good persistence on the finish.
Suggested food pairings while tasting this Friulian wine
Particularly suitable with all ground dishes based on meat, mushrooms or cheeses. Serve at a temperature of 12-16 ° C in a large glass, in order to favor oxygenation and therefore favor the development of the olfactory bouquet. To better appreciate this Friulian orange wine, we recommend to open it and let it breathe for about 15-30 minutes before tasting it.
