Our Passito di Noto is produced in Sicily with one of the most ancient varieties of the world, Moscato Bianco. Passito is an old wine that becomes actual with a modern system of drying the grapes. Explosion of exotic fruits, jasmine, candied citrus fruits. It is complex but easy to love at the same time and it is the great companion for sweets and ice-creams. 100% Moscato Bianco grapes, harvested at the end of august and dried in boxes of 25 kg at 23°C. Once they have lost half of their weigh, around 40 days later, the grapes are soft pressed and the juice, rich of sugar, is fermented at 18°C in inox till the bottling.
Features of the Passito di Noto DOC wine
Shiny gold yellow colour enriched by dense scents that recall de-hydrated apricots, mango, orange skin, loquat, date, pistachio and vanilla. The taste recalls patisserie where the sweetness dominates the fresh component. It is creamy, dense and harmonious. Great persistence.
