Carmignano Riserva “TREFIANO” DOCG BIO
“Carmignano RIserva DOCG Trefiano” is a red wine with a rare elegance, deep and smooth, produced with the assembly of Sangiovese, Cabernet and a little quantity of Canaiolo. The wine making is managed in steel, while the aging is developed in tonneaux made of French oak for 16 months. Refined and harmonious, this article is ready to be drunk immediately, but it can surprise even after some years. The blend is composed by 80% Sangiovese, 10% Cabernet and 10% Canaiolo, cultivated in the area of Carmignano, in the district of Prato. Canaiolo variety is harvested at the end of September, Sangiovese at the beginning of October and Cabernet in the middle of October. 7 days of alcoholic fermentation in steel followed by further 13 days maceration in contact with the peels at 26°C.
Features of “Trefiano DOCG”
The organoleptic exam shows a ruby red colour with light garnet shades. Its perfume reveals elegant hints of violet, cherry. Dark cherry, vanilla, liquorice and cocoa. The taste is balanced, harmonious and classy, with defined tannins sweetened by freshness and sourness. The soft final is characterized by a great persistence surrounded by spicy sensations.
Recommended food pairings while tasting this wine
This wine is perfect with baked or grilled meat. It has to be served at 20°C in a high, wide wine glass that allows the correct oxygenation- It reaches an alcoholic strength of 14% Vol.
