Bolgheri Rosso Superiore "Grattamacco" DOC BIO
This wine praises the denomination Bolgheri Rosso Superiore DOCG and it is produced with 65% Cabernet Sauvignon, 20% Merlot and 15% Sangiovese. Its vineyard is located 100 meters above the sea level. The soils here are composed by sandstones, mixed clays, flysch limestone, and marls, while the weather that touches the plants is Mediterranean-tempered. The density of the installation swings between 4500 and 6000 stumps per hectare and produce around 60 quintals. Two main training methods: spur-pruned cordon and simple guyot. The average age of the plants is 20 years old. The wine-making starts with the alcoholic fermentation, managed in snub containers made of wood (opened), while the malolactic one is developed in barrique, where the wine ages for 18 months. At least 12 months maturation in the bottle.

This sensational wine of Tuscany shows a dark ruby red colour. Its perfume recalls fruits, accompained by defined balsamic hints. The wood, well integrated between the other scents, gives an elegant smoked sensation to the final. The taste is severe but fresh at the beginning. Then it becomes rich and mineral, where the presence of tannins is balanced by a good sourness.

Excellent with game and local preparation like boar, braised red meat or medium aged cheeses. It has to be served at 18°C in a wide wine glass that guarantees a good oxygenation. It reaches an alcoholic strength of 14% Vol.
