This Barbera “La Desiderata” from Cantina Vanzini is a DOC red wine produced in the hills of the Oltrepò Pavese, an area characterized by mineral-rich clay-limestone soils and a hilly climate ideal for ripening grapes. The wine is born from a blend of Barbera and Croatina, historic varieties of the area, grown in first hill vineyards. Winemaking involves fermenting the grapes in stainless steel at a controlled temperature, after maceration on the skins for approximately 10-12 days, which allows for the extraction of color, aromas, and structure. From the racking, about 30% of the product is placed in 225-liter French oak barriques for 3/4 months of aging. Steel passage follows for another 2 months.
