This Millesimato Aurora Rosé from Cantina Bonfadini comes from a blend of Chardonnay and Pinot Noir grapes. The grapes are raised on glacial moraine soils in the hilly area and the vineyards have an average age of 10 years. Once harvested during the manual harvest of the first and second decades of August, the grapes are placed in boxes and then subjected to soft pressing. Pinot Noir is vinified in pink, that is, leaving the skins in contact with the must for 10 hours. The first fermentation takes place in steel tanks at a temperature of 14-16°C and part of the Chardonnay then ferments and ages in medium-long roast French oak barriques for 7 months. Final aging in bottle for at least 40 months.
Features of this Millesimato Rosé
It has a bright salmon pink color and a fresh olfactory profile reminiscent of red fruits, bread crust, and vanilla. On the palate, it is long and persistent and has an excellent structure.

Excellent with seafood dishes such as hot appetizers, oysters, sushi and sashimi, squid ink linguine, fried foods. Serve at 6-8°C.
