Spumante Pinot Nero Metodo Classico Blanc de Noir Dosaggio Zero Nature AIACE DOCG from Vanzini is a sparkling wine of great expressive purity, obtained from 100% Pinot Noir grapes, grown in the hills of the Oltrepò Pavese, on clayey-limestone soils rich in sandstone and marl, located between 280 and 400 metres above sea level. Winemaking involves the manual harvesting of grapes between late August and early September, using only the flowering must obtained by soft pressing. Fermentation takes place in steel at a controlled temperature between 14 and 18 °C, followed by the setting of foam in the bottle according to the Classical Method and a long aging on the yeasts. After disgorging, the wine rests further in the cellar before marketing.
Features of this Vanzini Spumante Dosaggio Zero
From an organoleptic point of view it has an intense straw yellow colour with golden reflections and a fine and persistent perlage. The bouquet is large and complex, with floral and fruity notes that recall apple, pear, banana and light shades of vanilla. On the palate it is dry (zero dosage), elegant, velvety and savoury, with excellent structure and long aromatic persistence.

In gastronomic pairings it is extremely versatile: excellent as an aperitif, it is also best expressed throughout the meal with dishes of fish, shellfish, white meats and cheeses, thanks to its freshness and the tension typical of “Nature”. Serve at 7-8°C.
