Aiace Brut is a sparkling wine made from 100% Pinot Noir, produced in the hills of Oltrepò Pavese, in vineyards located between 280 and 400 metres above sea level in the municipalities of San Damiano al Colle, Montecalvo Versiggia and Pizzofreddo. The soils are of clay-limestone-arenaceous origin and the vineyards are raised with traditional systems such as Guyot and spurred cordon, with a yield of around 70 quintals per hectare. The harvest is manual, carried out between the end of August and the beginning of September, and only the first must obtained from soft pressing is used. After static clarification, fermentation takes place in steel at a controlled temperature between 14 and 18 °C. The second fermentation (foam intake) takes place in the bottle according to the Classic Method, with aging on the yeasts and subsequent resting in the cellar after disgorging before marketing.
Characteristics of this Ajax brut
From an organoleptic point of view, it has an intense straw yellow color with golden reflections and a fine and persistent perlage. On the nose it is complex and intense, with floral and fruity notes that recall apple, pear, banana and light shades of vanilla. In the mouth it is dry, velvety and elegant, with good flavour, structure and a long aromatic persistence.

Excellent as an aperitif, it pairs well with fish-based dishes, white meats and cheeses, making it suitable even for a full meal thanks to its structure and finesse. Serve at 7-8°C.
