This wine from Cantina Nino Negri is made from white Nebbiolo grapes: it originates from an alpine environment, on soils that give the wine a certain minerality; the vineyards are located on the sunny slopes of Valtellina at about 350-600 metres above sea level: this allows for slow ripening and, above all, more delicate aromas. The harvest takes place between September and October: the Nebbiolo grapes are vinified in white, i.e. with immediate separation of the skins. This is followed by fermentation in steel at a controlled temperature of 18°C, then racking and resting on the fine lees for several months. The final stage of ageing also takes place in steel, avoiding contact with oxygen.
Characteristics of this Nino Negri wine
It has a straw yellow colour with slightly golden reflections. The bouquet is clean but delicate, with notes of green apple, lemon and bread crust. On the palate, it is fresh, with a savoury and mineral aftertaste.
Recommended pairings with this Valtellina white wine
Try it with raw fish, fried fish or vegetables, but also white meats. Serve at a temperature of 10-12°C.
