Istante is a Bordeaux cut produced in South Tyrol from a blend of Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot, with proportions varying depending on the vintage. The grapes come from vineyards located between 250 and 500 metres above sea level, in warm areas with favourable exposures and predominantly sandy or porphyritic soils, conditions that favour complete ripening and aromatic concentration. After careful selection, fermentation takes place in open vats with frequent reassembling and fulling, even several times a day, to extract color, aromas, and structure. Once alcoholic fermentation is complete, the wine undergoes malolactic fermentation in barriques and continues to age in the same woods for approximately eighteen months, followed by a further year of maturation in the bottle, a fundamental phase for integrating the components and defining the overall balance.
Characteristics of this South Tyrolean wine
In the calyx it has an intense garnet red colour. The olfactory profile is broad and layered, with notes of ripe and dehydrated fruit such as plums, figs and dates, accompanied by more complex nuances that recall green tea, the undergrowth and light woody sensations. On the palate it stands out for an elegant and enveloping structure, supported by compact and well-integrated tannins, which contribute to a refined rather than muscular texture. The sip is balanced and deep, with a long and persistent finish that highlights complexity and finesse.

It is a wine that lends itself to accompanying structured and intense dishes, such as grilled red meats, roasts, game and rich meat-based preparations, but it also finds an excellent balance with aged and tasty cheeses.
