Franz Haas Pinot Blanc “Lepus” is an elegant and structured white wine, representing one of the most complete expressions of this grape variety in South Tyrol. As for production, the grapes come from vineyards located between 400 and 800 meters above sea level, raised in Guyot on very varied soils, ranging from light sandy components to more compact soils of porphyritic origin, with exposures mainly to the south and southwest. After the harvest, the must ferments at a controlled temperature, especially in stainless steel, while some is vinified in barriques, a choice that gives greater complexity. Before bottling, the wine ages on the lees for about five months, acquiring structure and depth, and subsequently requires an additional period of rest in the bottle to fully develop its bouquet.
Characteristics of this South Tyrolean wine
From an organoleptic point of view, it has a bright straw yellow colour. Fruity and spicy notes emerge on the nose, with references to ripe apple, wildflowers and fresh bread. In the mouth it stands out for a decisive personality, supported by an elegant and robust structure, well balanced by harmonious acidity. The ending is full and persistent, leaving a feeling of balance and complexity.

As for pairings, this wine proves to be very versatile and pairs well with even structured dishes, such as rich appetizers, pasta or rice-based first courses, and fish preparations with or without sauces, as well as lightly spiced and Asian dishes. The ideal serving temperature is between 14 and 16 °C, so as to enhance both its aromatic component and its taste structure.
