From pure Bovale grapes comes this red wine from the Sardinian winery Su'entu: the vineyards are exposed to the North-East, at an altitude of 250 m above sea level. The soils are sandy with sandstone. The harvest takes place between the first and second decades of September: the bunches are harvested at night to protect them from the high temperatures of the day, and with a slight overripeness to obtain hints of ripe fruit. The long maceration of 10-12 days during alcoholic fermentation allows for prolonged contact between the pomace and the must, thanks to soft re-trimming. This is followed by alcoholic fermentation and then more malolactic fermentation. The final stage of maturation takes place partly in steel and partly in Slavonian wooden barrels.
Characteristics of this Sardinian wine
It has a ruby red color with purple highlights. The olfactory profile is particularly intense, with references to red fruits and spices. On the palate it is warm, enveloping and with a mellow tannic texture.

Try it with grilled red meat, aged cheeses, and typical Sardinian dishes like grilled sheep fillet. Serve at a temperature of 15-16°C.
