Description du vin
Castello di Spessa Winery's 'Amadeus' sparkling wine is made mainly from Chardonnay grapes (83%), to which a small portion of Pinot Noir is added. After a strictly manual harvest, the grapes are gently pressed with a 50% yield. The resulting product thus rests for at least 40 months on the lees in the castle cellars before being subjected to the disgorging process.
Characteristics of this Castello di Spessa sparkling wine
On organoleptic examination it presents a golden yellow colour with greenish reflections. The nose is elegant with scents ranging from floral to citrus, finishing with mineral nuances. In the mouth it is balanced, dry, with a savoury salty finish.
Recommended pairings when tasting this bubbly
Excellent with raw fish, shellfish and fish dishes. Serve at a temperature of 8°C in a tapered goblet.
