This red wine from Cantina Vignaioli Scansano is made from predominantly Sangiovese grapes and is a modern interpretation of the Tuscan technique known as Governo: a method of vinification used in the production of Chianti wines that requires a second, slower fermentation. The grapes are harvested between mid-September and early October: the Sangiovese grapes are picked by hand into small perforated crates and left to dry in cells so that they lose 15% of their weight. This is followed by low-temperature vinification with maceration on the skins for 4-6 days, then racking and completion of fermentation. After 4 weeks of drying, the Ciliegiolo grapes are pressed and, once fermentation is complete, the Sangiovese is added. Maturation takes place in steel for three months with the fine lees.
Characteristics of this Tuscan wine
It has a ruby red colour and a complex bouquet of fruity notes of plums, blackberries and cherries, as well as spicy notes. On the palate, it has a fruity finish and is medium-bodied and dry.
Recommended pairings with this Tuscan red wine
Best drunk young, within 2-4 years of harvest. Excellent with cold cuts, first courses and red meat main courses. Serve at a temperature of 16°C.
