he Baffonero from the Rocca di Frassinello winery is one of the most representative reds of the Tuscan Maremma and is considered the expression “grand cru” of the company's Merlot. It originates entirely from Merlot grapes from a single vineyard of approximately 3.5 hectares, located in a particularly favorable position at the foot of the winery designed by Renzo Piano. The soil, rich in skeleton and with a strong clay component, together with constant exposure and ventilation, allows for slow and complete ripening of the grapes, with a high aromatic concentration. Winemaking takes place in concrete tanks with temperature-controlled fermentation, followed by a long maceration that promotes the extraction of color, structure, and complexity. The wine then ripens for about two years in new French oak barriques and completes its aging with a further period in the bottle. This route of high technical precision helps to build a powerful yet refined wine.
Characteristics of this Tuscan wine
From an organoleptic point of view it has a very intense and deep ruby red colour. On the nose it is rich and layered: notes of ripe black fruits such as blackberry and blueberry emerge, accompanied by vanilla and, with evolution, more complex aromas of tobacco, chocolate and coffee. In the mouth it is full, structured and enveloping, with tannins well present but integrated and a freshness that lengthens the sip, making it elegant despite the power. The finish is long and persistent, with spicy and toasted returns.

In pairings it requires dishes of equal structure and intensity. It is best expressed with important red meats, braised meats, stews and game, but also with aged or strong cheeses. It is a rich and flavorful cooking wine, capable of supporting complex preparations without losing balance. The ideal service temperature is around 16-18 °C.
