Pinot Nero DOC KETTMEIR Santa Margherita
The Pinot Nero DOC of the Kettmeir winery is a classical wine of the Trentino and it reflects the local tradition and culture by valorizing and spreading its character in the world wide. The Pinot nero is vinified in red by the maceration on peels under temperature control starting from 12-13°C, then during the fermentation, with a progressive increasing, it achieves the 25-27°C at the end of this process. This increasing of the temperatures permits the alcoholic fermentation of the Pinot nero to extract the natural colored substances and to stabilize themselves with the tannins of the grapes. Then, after the fermentation the young wine has to age for 4 or 6 months in wood barrels of 30 hectoliters. The Pinot nero grapes of the Kettmeir company are cultivated on calcareous soils, quite loose. The soil consisting of stones has a good quantity of organic substances and the vines are located at 450-600 meters above the sea level. The pinot grapes are used pure at 100% and they are cultivated in shoot positioning with the trellised method.
